1 cup fine ricotta cheese
1 cup yogurt
2 large eggs
1 tsp grated lemon rind
1 tsp vanilla extract
3 tbsp granulated sugar
1 tbsp margarine, melted
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
pinch of salt
1 pint fresh strawberries, washed and hulled, diced into small cubes
2 tsp lemon juice
4 tbsp honey
Mix together the ricotta cheese, yogurt, eggs, lemon rind, vanilla, sugar and melted margarine.
Sift together the flour, baking powder, baking soda and salt.
Add the dry ingredients to the cheese mixture and stir until just combined. Heat a griddle on medium heat. When the griddle is hot, spray the surface with a non-stick cooking spray and spoon out 3 tbsp of batter for each pancake.
Spread the batter into three-inch circles and cook until both sides are golden brown.
For the strawberry sauce, combine the strawberries, lemon juice and honey. Serve sauce on top of the pancakes.
